Meticulously prepared with organic, stone ground Italian flours and allowed to ferment for a full 48 hours, Uditi’s prized “slow dough” results in a crust that is light and easy-to-digest, yet sturdy enough to pick up with one hand. Consciously sourced toppings blend the traditional with the unexpected and are showcased in offerings such as the Cacio e pepe and Neo Margherita with San Marzano tomatoes grown exclusively for Pizzana in the Neapolitan countryside. Pizzas also feature “Fior di latte” (mozzarella) shipped fresh from Italy several times a week and are available with a gluten-free crust.
Like the original in Brentwood, Pizzana’s menu includes antipasti and salads that are similarly informed by Uditi’s Italian heritage with a Los Angeles sensibility. Candace, an executive producer and judge for the new Netflix baking show “Sugar Rush,” brings her pastry expertise to Pizzana’s dessert menu, overseeing the culinary direction with classics such as olive oil chocolate cake and salted caramel panna cotta. The wine list offers a selection of wines from small Italian & California producers.
